This was an especially good fall soup. I got the recipe from the Food Network website. I didn't have any dried black beans at the time, so I made a quickie version using canned. I'm sure it is better the slow cooked way, but it made it in about and hour, and KC seemed happy with it. I did mostly what the recipe said except cut up the pork and sauteed it with the onions, head of garlic, and spices/herbs. Then, since the beans were already hydrated, I only added about 2 cups of broth with the drained beans, and then about a handful of fresh cilantro, the bay leaf and crushed red pepper. Them let it simmer for about 15 minutes, food processed about half of it and let it simmer a few minutes longer.
With the mojo, I did everything the same, except I blended it in the food processor. Serve with sour cream, chips, ans cheese. That's how I like it. Next time I'll try it slow cooked.
