This is delicious and can very easily be made a day ahead of when you are eating it. The recipe is here. I usually add a dollop of sour cream on top. It is very good for you and full of flavor.

Thanks for posting the recipe. I have a hard time knowing what I put in things and
Oops. That published before I was ready. Anyway, I wanted to say that I have a hard time following and recording recipes too, but I love seeing even the general idea of how you've made a lot of things. Inspiration! One question - what ideas do you have for good onion substitutions? We have something of an onion allergy at our house, so I'm always trying to figure out what will work well instead.
